They bill themselves as "no-nonsense" coffee crafted by enthusiasts for enthusiasts. My palate was already intrigued!

Diving Into Real Good‘s Roasting Specialties

Real Good offers a range of light, medium and dark roasts along with a rotating lineup of limited-edition flavors. For my initial tasting trials, I stuck with evaluating their core beans – breakfast blend, French roast, espresso and decaf.

They pay well above fair trade prices to incentivize quality. According to their head roaster Danielle, they trash three times more green coffee than they actually roast due to inconsistencies. This level of scrutiny is rare and yields a markedly better brew.

Batch Roasting for Peak Freshness

Real Good runs relatively small 100 lb batches for optimal consistency. Larger commercial operators like Starbucks roast in 500+ lb loads, meaning some beans get overexposed while others roast unevenly.

By keeping batches modest and monitoring temperature rigorously, Real Good beans achieve beautifully balanced roast levels. I confirmed with Danielle their temperature sensors stay within 2-5 degrees fluctuation across an entire cycle. Impressive!

Resting & Outgassing For Shelf Life

Another vital and often rushed part of the roasting process is resting. This refers to letting beans sit for 12-24 hours post-roast to allow internal gases to escape. Skipping this step makes coffee taste flat and stale instantly.

I brewed and enjoyed Real Good‘s beans in a variety of preparations – drip machine, French press and pour over. I used 2 tbsp ground coffee per 6 oz water, adjusted to a medium grind size.

Nice blend clearly designed for espresso and milk drinks. Robust tobacco elements would overpower other preparations. Superb crema production! My cafe standby for lattes.

Final Verdict: A New Favorite Daily Brew

After deeply analyzing Real Good‘s core line my months-long hunt for an affordable, flavorful daily roast has ended victoriously! I was thoroughly impressed by the complexity and consistency demonstrated across their light, medium and dark options.

Their success clearly stems from incredible attention to sourcing, roasting and resting fundamentals. I feel my dollars went fully towards rich taste rather than superficial brand frills.

While their decaf option didn‘t wow me, their core breakfast, French and espresso roast prove Real Good can compete on quality with revered Pacific Northwest peers like Herkimer and Lighthouse Roasters (my longstanding go-to local spots). And they achieve this at nearly 40% less cost thanks to their direct trade model.

For fellow coffee lovers frustrated by the price-quality tradeoff imposed by lavish third wave operations, I couldn‘t recommend Real Good more. I‘m happily enrolled in their monthly subscription and don‘t see that changing anytime soon!
